Zucchini & Quinoa Bowl

Zubereitungszeit: ca. 25 Minuten

Zutaten für 2 Portionen:

1 Beutel „Gemüse Pfanne mit Zucchini & Quinoa“

1 Süßkartoffel

6 Karotten

ca. 30 ml Olivenöl

1 Avocado

1/2 Bund Rucola

2 Radieschen

60 g Humus

Salz

 

Utensilien: 2 Pfannen, 1 Schale

 

Zubereitung: 

1. Rucola, Radieschen, Süßkartoffel und Möhren säubern. Möhren schälen und Süßkartoffel in gleichmäßig dicke Scheiben schneiden. Avocado aus der Schale lösen, Kern entfernen und zerteilen.

 

2. 3 EL Olivenöl in einer Pfanne erhitzen. Möhren und Süßkartoffelscheiben darin gleichmäßig verteilen und bei mittlerer Hitze gar werden lassen. Die Gemüse Pfanne mit Zucchini & Quinoa in einer weiteren Pfanne nach Packungsanweisung zubereiten.

 

3. Alle Zutaten gemeinsam in einer Schale anrichten und einen Klecks Humus dazugeben.
